At the end of the fermentation process the young beer is carefully cooled from +5 to -1.5°C. Then it slowly begins to acquire its distinctive, mature taste. And to complete the whole process the last residues of the extract are fermented. One of the most important things to happen at the end of the two-week storage period is the clarification of the beer. Things that cloud the young beer, such as yeast cells and protein compounds, are slowly deposited at the bottom. This gentle process helps to ensure Bitburger's long shelf-life.
Bitburger ensures the highest possible hygiene standards throughout the fermentation and storage areas. After each stage of the process, every tube, pipe, vessel and tank is thoroughly cleaned by one of 12 cleaning systems.
