Recipe for two servings

Precooking prep time: 5

Barbecue/cooking time: 10

Ingredients:

  • 200 g whole spelt flour

  • 1 tsp baking powder

  • 1 tbsp sugar

  • 1 small pinch of salt

  • 2 eggs

  • 100 ml milk

  • 100 ml Bitburger 0.0% Drive (alcohol-free)

  • Pulp of ½ a vanilla bean

  • 1 ripe banana

  • 2 – 3 tbsp butter for frying

  • Powdered sugar to sprinkle

  • 2 tbsp maple syrup

  • 2 tbsp roasted slivered almonds

Preparation:

  1. Mix the flour, baking powder, sugar, and salt in a bowl.

  2. Stir together the eggs, milk, Bitburger 0.0% Drive, and vanilla pulp. Add the egg-and-milk mixture to the flour mixture and stir it into a smooth, thick batter.

  3. Peel the banana and slice it. Melt the butter in a large frying pan until it starts foaming, then brown the banana slices in it. Pour the batter over the banana slices, forming six circles (each with 2 – 3 tbsp batter), and cook them for 2 –3 minutes until golden yellow. Flip them and cook the other side for 1 – 2 minutes until golden yellow.

  4. Dust some powdered sugar over the pancakes and stack them three-high on two plates to make little towers. Coat with a few drops of maple syrup and serve with roasted slivered almonds sprinkled on top.
