Beer Pancakes with Banana
Recipe for two servings

Ingredients:
- 200 g whole spelt flour
- 1 tsp baking powder
- 1 tbsp sugar
- 1 small pinch of salt
- 2 eggs
- 100 ml milk
- 100 ml Bitburger 0.0% Drive (alcohol-free)
- Pulp of ½ a vanilla bean
- 1 ripe banana
- 2 – 3 tbsp butter for frying
- Powdered sugar to sprinkle
- 2 tbsp maple syrup
- 2 tbsp roasted slivered almonds
Preparation:
- Mix the flour, baking powder, sugar, and salt in a bowl.
- Stir together the eggs, milk, Bitburger 0.0% Drive, and vanilla pulp. Add the egg-and-milk mixture to the flour mixture and stir it into a smooth, thick batter.
- Peel the banana and slice it. Melt the butter in a large frying pan until it starts foaming, then brown the banana slices in it. Pour the batter over the banana slices, forming six circles (each with 2 – 3 tbsp batter), and cook them for 2 –3 minutes until golden yellow. Flip them and cook the other side for 1 – 2 minutes until golden yellow.
- Dust some powdered sugar over the pancakes and stack them three-high on two plates to make little towers. Coat with a few drops of maple syrup and serve with roasted slivered almonds sprinkled on top.
