Bitburger beer ribs

Ingredients
For the ribs:
4 cloves of garlic
4 stems of lemongrass
1 red hot pepper
11.2 fl.oz. of Bitburger Premium Pils
3.5 fl.oz. peach juice
3.5 fl.oz. peach juice
4.5 lb of meaty, long pork ribs (Saint Louis Cut), ready to cook
For the spice mix:
2 tbsp coriander seeds
1 tbsp black peppercorns
1 tbsp black peppercorns
1 tbsp of onion powder
2 tbsp of brown cane sugar
1 tbsp of coarse sea salt

Preparation
- Prepare the grill (with lid approx. 250 ° F to 275 ° C) for low, indirect heat.
- Peel and roughly press the garlic. Tap the lemongrass with the back of the knife and cut into pieces. Now cut the hot peppers into rings. Mix garlic, lemongrass and hot peppers as well as Bitburger Premium Pils, peach juice and lime juice and pour over the ribs. Cover and marinate at room temperature for at least 30 minutes. Ideally, leave it in the fridge overnight.
- Grind all ingredients of the spice mixture in a mortar.
- Remove the ribs from the liquid, pat dry and rub in with the spice mixture all around. Then place them all in the roasting basket and grill for 2 to 2.5 hours on indirect heat with the lid closed.
- Let the liquid run through a sieve and brush the ribs with it every 15 minutes while grilling. Boil the remaining liquid about 15 minutes before the end of cooking on direct heat with the lid closed and brush the ribs with the syrup.
